Traditional Roman Pizza with a Healthy Twist
You see, everything we do at 3 GRAINS stems from a deeply rooted passion for hand-crafted cuisine. So deeply rooted in fact, that it goes back to Ancient Rome - a time when Augustus Caesar reigned supreme; poets like Virgil, Horace and Ovid took centre stage; chariot racing was popular and Roman bakers used a range of stone ground ancient grains to produce different flavoursome flatbreads, the ancestor to pizza.
Fast forward a few (thousand) years, and 3 GRAINS is bringing the taste of ancient Rome to the streets of Melbourne, with it’s newest pizzeria. We’ve adopted the traditional Roman baking method, taken inspiration from ancient Roman recipes, and added in fresh local ingredients to add a healthy twist to one of life’s best comfort foods.
tHE GOODNESS OF 3 GRAINS
High in flavour, light on the stomach, our three ancient grain flour mix; together with the slow-leavening we have adopted from the Ancient Romans and the 15+ flavour combinations we have handcrafted; result in a light, soft, airy, and healthy pizza that tastes great!
By using a minimum of 3 flour mixes for the dough, we’re able to create the ideal handcrafted 3 GRAINS pizza base that is healthier for you (as if we need another excuse to eat pizza right?). We select from a range of flours, such as spelt (farro), soft wheat flours and whole grain (integrale) flours, and use these in a three-mix combination.
The dough is then left for 72 hours for a slow ferment in cool conditions (think ancient Rome underground cellars), and the end result is an artisan pizza bread with all star qualities - light, fluffy, easy to digest, high in fibre, good for you, and most importantly, delicious!
The group of people behind 3 GRAINS have been brought together by a love for pizza. And more specifically, a love for the history and technique behind the Roman-style pizza.
We are Italians trained by some of the world’s best Roman artisan pizza chefs, and are experts in our field, united by our passion for the craft.
And you can quite literally taste our passion on the plate. We love creating unique pizzas through artisan dough-making, and adding innovative topping combinations. And we love creating pizza that is good for you, using the finest and freshest local ingredients to provide an authentic Italian dining experience in the west of Melbourne.
